A Karuizawa bakery offering a variety of unique breads

Karuizawa has been visited by foreigners as a summer resort since the Meiji era. It is a place where bread culture was cultivated early on, and even today there are many bakeries. We will introduce carefully selected shops, from natural-oriented bakeries that use natural yeast to bakeries that are popular with families.
1sioru bakery
A chewy bread made using a unique method that sells out by reservation one month in advance

This is a small bakery in the Shinano Oiwake area. Its signature bread is so popular that it sells out by reservation a month in advance. The dough is made over a complex process that takes three days, and then carefully baked. The owner, who has trained for many years at bakeries in Tokyo and Kyoto, is particular about "making bread with minimal effort." By thoroughly managing the processes of fermentation, aging, and enzymatic decomposition, he creates a unique, chewy texture from a dough with a simple recipe. If you are lucky enough to get your hands on the bread, try toasting it thickly without adding anything to enjoy the deep flavor.
The savory breads, such as melon bread and cheese curry bread, are also excellent.

All products except for bread can be purchased on the day. If you see it in the store, be sure to try the melon bread. The contrast of textures, crisp on the outside and chewy on the inside, is irresistible. The cheese curry bread is also popular, and you can enjoy the authentic flavor of spices. The owner's commitment is to "make only as much as he can each day." For that reason, during the summer tourist season, after opening at 9am, the shop may close by midday as it has sold out. We recommend visiting in the morning.

5Ippo Bakery

This bakery has a wide selection of rye breads. They have 100% rye bread made with homemade natural yeast, as well as campagne, noirésan, baguettes, and more, all of which contain 30% rye. There are about 30 types of bread on display at all times, most of which contain rye. The unique aroma of rye and the sour and sweet taste of the sourdough are exquisite, and the more you chew, the more the rich flavor fills your mouth.
The owner, an artist, was never able to forget the taste of the rye bread he had in Germany when he was young, so he taught himself how to make bread. Now, he is so particular about ingredients that he grows rye without pesticides in a field in Komoro, and every July the entire Staff/staff member harvests it.
Rye bread stored in a wooden box

The interior of the restaurant, built in the style of an old house along the Nakasendo road, is filled with furniture and miscellaneous goods made by the owner's workshop, Geo Paradise, creating a space filled with the warmth of handiwork. There is also an eat-in corner, and dogs are welcome on the terrace seats. The lunch, which comes with homemade enzyme juice and soup full of vegetables, is also popular.
The shop is lined with wooden cases, and when you look inside, you'll see that the bread has been carefully arranged as if it were a work of art on display. When you open the glass lid, the sweet and fruity aroma of homemade yeast wafts out, making you feel like you're in a sake brewery. You can enjoy the adult flavor, with some customers saying they enjoy their rye bread with their alcoholic beverages.
In addition to rye bread, other popular items include croissants with a moist crust made with cultured butter, and bean paste buns with mixed grains in the dough.

6Pan Trube

A popular local bakery. Customers are constantly coming in, especially from when the shop opens in the morning until around noon. They offer a lineup that can be enjoyed by people of all ages, from children to the elderly, including baguettes, sliced bread, savory bread, sandwiches, and donuts. Although the store is a minimal space of just 16 to 20 square meters, they stock over 100 different types of bread every day.
"Asama Bread," inspired by Mount Asama, is made by baking the dough directly on the surface of the bread, rather than filling a mold and baking it. It is a popular bread that is crisp on the outside and fluffy on the inside, and sells out quickly after opening.
In addition, the Milk France, which is a 50g crust sandwiched between butter cream containing condensed milk, is characterized by its smooth texture and melt-in-your-mouth feel, and is a dish that has many loyal fans.
Find your favorite bread from a wide variety of options!

Run by a husband and wife boulanger team, they make as much bread as possible and want Guest/customer to try a variety of breads. They don't just replenish the same bread after it's sold, but instead offer different breads one after another, so you'll want to come back again and again.
One of the things we are particular about is that the dried fruits we mix into the bread dough, such as raisins and cranberries, are steamed before use. This helps to preserve the moisture in the dough and makes it soft.
The store's name means "to find" or "to discover" in French, and it's a store where you can discover your favorite bread from the many varieties available.

7Karuizawa Kitchen Rotary Store

The former Mikasa Hotel in Karuizawa was founded in 1906 (Meiji 39). At the time it was used by many business leaders and cultural figures, and continued to operate until 1970 (Showa 45). Today, it is a designated national important cultural property and a tourist attraction.
The "Mikasa Curry Revival Project" recreates the Western-style curry served at the former Mikasa Hotel. Several restaurants are participating in the project, hoping to allow tourists to experience Karuizawa's history and revitalize the town. Among them, the "Mikasa Hotel Curry Bread" has been a big hit since it was released at this shop in the center of Kyu-Karuizawa Ginza Street.
A secret recipe curry made with herb chicken and vegetables

The crispy fried bread is filled with a secret curry sauce made from simmered Shinshu herb chicken and vegetables, giving it a truly juicy taste. There is often a line, and the bread is always fried frequently, so it can be enjoyed warm.
Also popular is the "Mikasa Hotel Curry and French Fries," which is a curry dip with French fries. Similarly, the "Mikasa Hotel Blend Coffee," which recreates the taste of the old Mikasa Hotel, is also popular.
As it is a take-out shop, many customers buy some as souvenirs, and it is also a good idea to enjoy it leisurely on the Shinkansen, bus, or car.
