"Happy More Market" in Ginowan City is a direct sales store for vegetables where many kinds of agricultural products are sold. They also sell original smoothies to make use of non-standard vegetables and fruits that farmers are having trouble selling. The smoothies contain lemons, and only the flesh was used, but when they saw the large amount of lemon peels being discarded, they wondered if there was a way to make effective use of them, and thus "Lemon Andagi" was born.
The bitter white part of the lemon peel is removed, and only the yellow part is crushed and kneaded into the sata andagi dough. To bring out the refreshing lemon scent, the size of the lemon peel and the timing of kneading it into the dough are carefully considered, always in pursuit of deliciousness.
