Local arts and seasonal flavors

Yuba—or jellied tofu skin, a Nikko delicacy—and wagyu beef are featured in the dishes served at dinner, elegantly presented on wooden dishware featuring Nikko-bori engravings.

Standard Seasonal Dinner 

This is the standard kaiseki course meal. The sashimi is seasoned with a wide variety of condiments. Enjoy to your heart’s content this meal made of individual dishes, each one carefully paying homage to the cultural roots of its place of origin.

Special Dinner:Spring-Summer

Start with an appetizer of sea urchin and tofu skin, then savor a Yanagawa-style hot pot with wagyu beef and tofu skin served with a salty-sweet broth and eggs.

Special Dinner:Autumn-Winter

The course begins with an appetizer consisting of sea urchin and tofu skin, with the main course being wagyu beef and tofu skin dipped in a bath of soy milk for a mille-feuille (layered) shabu-shabu.

“Nikko Tofu Skin ”
Tofu skin is made using tofu, which originates from soybeans. It is an indispensable traditional dish that forms a part of Buddhist vegetarian cuisine. While Kyoto-style yuba (tofu skin) is made by pulling each strand up from the corner and folding upwards, Nikko-style yuba is made by drawing the strands up from the center and folding them in two, creating a wrinkled shape like a wave.

KAI serves breakfast made with ingredients that let you taste the flavor of the region and the local cooking techniques. Yuba was popularized by Nikko’s many temples and shrines, which served the staple to traveling priests. Breakfasts at KAI Nikko retain this tradition with a hearty yuba casserole.
