“Nikko Tofu Skin ”
Tofu skin is made using tofu, which originates from soybeans. It is an indispensable traditional dish that forms a part of Buddhist vegetarian cuisine. While Kyoto-style yuba (tofu skin) is made by pulling each strand up from the corner and folding upwards, Nikko-style yuba is made by drawing the strands up from the center and folding them in two, creating a wrinkled shape like a wave.
