Nama-rakugan, or \u201craw\u201d rakugan, is softer compared to ordinary rakugan, and is a traditional confectionery since the Edo period. We developed this activity in collaboration with Rakugan Moroeya, a long-established Japanese confectionery store in Kanazawa, as an experience of not only eating but also making by hand. With the guidance of our OMO Ranger, guests can make their own nama-rakugan and decorate the surface using our original stencils. It is an activity to compare the different kinds of bocha while listening to the explanations on the history of tea in Kanazawa, how to pair bocha with dishes, and how to make delicious tea. Hojicha is roasted green tea, where tea leaves are most commonly used. In Ishikawa Prefecture, hojicha made using the stems of tea is more common and it is called \u201cbocha\u201d or \u201cbancha.\u201d The idea of the season is deeply rooted in Japan and for food, having an ingredient during its best season (at its most flavorful or nutritious state) is ideal. Usually, hojicha is made with second or third season tea leaves, however in Kanazawa, which is said to be the birthplace of hojicha, first season (or \u201cnew tea\u201d season) tea leaves are frequently used. This makes hojicha from Kanazawa to be more fragrant and flavorful. One of our recommendations is the risotto of bocha and wheat gluten, which are both familiar foods since the Edo period. A highly aromatic risotto in which rice is wrapped in yuba (bean curd skin), and broth using boiled bocha and plenty of dashi (Japanese style broth) is poured over. Deep-fried wheat gluten with a sprinkle of rice crackers adds texture to this delightful breakfast.<\/p><p>Time: 7:00 am \u2013 10:00 am<br \/>Price: 1,600 JPY<br \/>Reservation: Not required<\/p><p><strong>Cafe\u00a0<\/strong><br \/>After breakfast, the OMO Cafe is available for use as a cafe until night. Using ingredients familiar in Kanazawa, both Japanese and Western-style dishes can be enjoyed. For example, \u201cBocha Anmitsu\u201d will be served at the cafe. Anmitsu is a classic Japanese dessert with fruits, red bean paste and black sugar syrup over agar jelly. OMO5 Kanazawa Katamachi gave it a twist where the agar jelly is made using bocha and the dessert will be finished with bocha syrup.
