日本人は冷たくて無関心だとよく言われますが、それは馴染みのない (英語のような) 言語を話すことを恐れて、控えた態度を取っているのだと私は常々憶測しており、そして今それがやっと理解できました。この旅を始めた時、私は緊張していましたが、すぐに日本語で話すことに慣れました。この旅で良かった点は、日本の人達との会話にすんなりと入り込め、私が日本語を理解できるとわかると、私に対してとても温かく対応してくれたことです。私は、日本のサービス文化がいかに発達しているかや、おもてなしのコンセプトについても認識できました。このおもてなしの哲学は、日本のサービスにしっかりと植えつけられ、それが些細な応対にも現れていることに尊敬の念を抱きました。

People often see the Japanese as cold and disinterested, but I’ve often suspected, and now I can understand that it is also born out of a fear of speaking a language (like english) that they are not familiar with, so they refrain from doing so. I experienced this nervousness when I started my trip, but soon got used to talking in Japanese. What I’ve loved about this trip is how easily I can slip into conversation with the Japanese people, and how warm they are when they find out that I understand their language. I’ve also come to realise is how developed the service culture here in Japan is, and the concept of Omotenashi. The philosophy of Omotenashi is so ingrained in service here it leaves me in awe at how it even leaves it’s mark on simple interactions.

私は青森であぶり (火で焼いた) 天丼を食べました。それは、今までに味わったことがないものでした (この旅では、沢山食べたのですが) 。表面を焦がすことは、とても理にかなっています。天ツユに含まれた糖分がカラメル化し、醤油が焦げて、たまらない燻したような香りが出、料理をまったく変えてしまうのです。この店は、19歳で料理を習い始めたと言うとても若い青年とかわいいお母さんが経営しています。かわいらしい小さな店ですが、青森の食べログで、次の大ヒットになると思います。

I had an aburi (flame grilled) tempura don at Aomori, something that I’ve never tasted before (and I have eaten a lot this trip). It makes perfect sense to char the surface, you caramelise the sugars in the tempura sauce and also burn the soya sauce, creating an irresistible smokiness that changed the meal entirely. This store is run by a really young guy who started learning cooking at 19 and his adorable mother. A lovely little shop that I expect will be the next big thing in Tabelog for Aomori.

この旅での一番の思い出は、奥入瀬渓流全域をハイキングしたことです。そこは素晴らしい天然の水が流れる12km の山道で、私は約4時間で歩き終えました。これは計画したのではなく、シャトルバスのバス停に着く度にバスに乗り損ねたので、歩き続けたのです。私は地形の起伏がほとんどないシンガポールから来たましたので、心がリフレッシュしました。涼しい山の空気を吸ってとても気持ちが良かったです。

I think one of my favourite moments this trip was hiking the entirety of the Oirase Keiryuu, a 12km tract that features some marvellous and natural water features which I completed in about four hours. It wasn’t exactly planned, I just kept missing the shuttle bus by the time I reached a point so I just continued walking. Coming from Singapore which has almost no topographical features whatsoever, it really refreshed my mind, and the cool mountain air was wonderful to breathe in.

私が出会った人達の中で、最も素敵で甘いカップルの一組は、横浜から来たと言う鈴木夫妻で、私と同様、奥入瀬渓流ホテルで休日を過ごされていました。はじめて鈴木さんに出会ったのは露天風呂で、その後、翌朝の朝食時に、彼と奥さんに何度も出くわしました。そして、奥入瀬トレイルで出会った時、私に「バスが来るよ ! 」と叫んでくれました。トレイルを12 km 歩いた後、やっとバスに追いつき、彼らと一緒に十和田湖に向かいました。私達はランチを共にし、それぞれの文化の違いについて話し合いました。また、私は中国と日本の漢字の使い方の違いについて説明しました。夫妻は、私に子ノ口行きのフェリーのチケットを買ってくれ、私のお金を受け取りませんでした。鈴木夫妻、親切にして頂いてありがとうございました。シンガポールに来られたら、きっと私がやさしさをお返しします !

One of the nicest and sweetest couples I met was the Suzukis, who are from Yokohama and were also holidaying at Oirase Keiryuu Hotel. The first time I met Suzuki-san was in the outdoor onsen, and I kept bumping into him and his wife thereafter, during breakfast the next morning. We met again along the Oirase trail, where they called out to me: “a bus is coming!” After 12km along the trail, I finally caught the bus and headed with them to Towada Lake. We had lunch together and talked about the differences between our cultures, and I explained to them how some kanji are not used the way they are in China and Japan. They also bought my ferry ticket for me back to Nenokuchi and refused payment. Thank you both for showing me so much kindness. When you come to Singapore I will definitely repay in kind!
