Founded in 1983, this Okinawa soba restaurant is said to be the oldest in Yomitan Village and is frequented almost exclusively by local regulars, with many families frequented by three generations.
There are five types of Okinawa soba, but the most popular is the "Nankotsu Soki Soba." The soup is made by simmering pork bones, chicken carcasses, and bonito over low heat, resulting in a clear, light flavor. They aim to create a gentle flavor so that you can "savor it down to the last drop." The original handmade noodles are thin, curly, hand-kneaded noodles that are just the right amount of soft, filling your mouth with the flavor of wheat.

This popular restaurant is always busy even after lunchtime. You can get a large serving of noodles for an additional 100 yen. The soba is served in Yachimun pottery. If you're lucky, you might even be able to find some Yachimun pottery from Kobo Jukaku, which is hard to come by.

No artificial seasonings! Delicious Okinawa soba made with fresh fish stock

This Okinawa soba restaurant is run by a shop owner whose hobby has been fishing since he was an elementary school student. In his previous job, the shop owner worked at an organic honey specialty Restaurant cafe, where he incorporated honey into a variety of dishes and created healthy menus. After working there for about 10 years, he went independent and opened his own original Okinawa soba restaurant.
They are proud of their soup stock made without chemical seasonings, using pork from the prefecture, dried bonito flakes, kelp, and fresh fish from the prefecture (such as akamachi, gala, irabucha, and black porgy). You can choose between the curly noodles from "Terukina Noodle Factory" and their original fresh noodles made with whole wheat flour from the prefecture's "Shima Mugi Kanasan."

Both types of noodles go perfectly with the soup, but the original fresh noodles are popular for their chewy texture and wheat aroma. The soup for Umikaze Soba is a proud bowl made with a base of fresh fish, bonito, and kelp from the prefecture, topped off with the umami of live clams.

The scent of the sea and the crunchy texture of the raw Aasa, similar to that of wakame seaweed, are delicious in a way that cannot be found in dried products. Okinawa soba boasts homemade noodles made with whole wheat flour from Okinawa

Located near the roadside station "Kinabansho", this is a specialty Okinawa soba restaurant. They serve rare homemade noodles made with whole wheat flour from Okinawa's "Shima Mugi Kanasan" wheat. Whole wheat flour is rich in dietary fiber, minerals, and vitamins, so it has been getting more attention in recent years as health consciousness has increased.
The recommended dish is the "Kingetsu Soba" named after the restaurant. It is topped with pork belly and deep-fried tofu, and comes with grilled cartilage soki on the side. The soup is made with bonito stock. The smooth, chewy texture and smooth texture go down perfectly with the thick, curly noodles.
