This sushi restaurant is located in the Maruyama district of Sapporo, where many fashionable restaurants are dotted. In addition to Japanese cuisine, you can enjoy original Edomae sushi inspired by the owner's own dining experiences. Meals are limited to the "omakase course" (from 16,500 yen, varies depending on availability) which consists of about six appetizers followed by about 10 nigiri sushi, and the menu changes daily depending on the ingredients available. One dish that is often served as one of the nigiri dishes is the "pickled egg mixed rice." In this dish, rice is mixed with raw egg in a small bowl just a few centimeters in diameter and chopped red tuna pickled in sushi is placed on top, making use of Edomae sushi techniques.

The sushi rice is made from Nanatsuboshi and Yumepirika rice from Higashikawa Town, located at the foot of Mount Asahidake in the Daisetsu Mountain Range, cooked in the famous Daisetsu Asahidake Gensui water, and finished with red vinegar from Tango, Kyoto Prefecture. The seasonal ingredients sourced from all over the country are salted, kombu-jime, aged, seared, and other techniques are used to create a perfect balance with the sushi rice. Another attraction is being able to watch the owner carefully work up close. You can enjoy the original flavors of Shinonome, such as snacks of monkfish liver garnished with dried figs and a monaka made from oyster paste mixed with ginkgo nuts.

This sushi restaurant is located on the 8th floor of the "Daimaru Sapporo Store" directly connected to JR Sapporo Station, and is a branch of "Sushizen," a sushi restaurant with its main store in the Maruyama district of Sapporo. You can enjoy seafood from all over Hokkaido, such as scallops, snow crab, and Ezo abalone, in nigiri and chirashi sushi. Popular menu items include "Miyabi," a set of 12 nigiri sushi, soup, salad, and dessert, and "Nama Chirashi Sushi," which comes with soup and salad. Both dishes use seasonal ingredients, so you can look forward to the type of toppings that will be served on the day. Sushi goes well with Sushizen's original bamboo-tubed pure rice sake, "Yukinohana."

As it is located inside a department store and no reservations are required, the appeal is that although it is a famous restaurant, it does not feel intimidating. It is easy to stop by while shopping or sightseeing, and you can enjoy seasonal recommended sets that are not available at the main store at a reasonable price. From 11:00 to 14:00, there is also a reasonable lunch menu, which makes it even more affordable. The best time to try to find an empty seat is generally between 14:00 and 16:00, but even during busy times such as lunchtime, you can get in as long as you queue. Both nigiri and chirashi are also sold in bento boxes, so you can take them out and eat them at your accommodation.

When you open the entrance door, you'll feel as if you've entered an art gallery, as the stylish, stylish space at this impressive sushi restaurant impresses. This conveyor belt sushi restaurant is located near Sapporo Dome and is particular about freshness. It has had a relationship with fishery-related people in Kushiro, where the restaurant was founded, for over 30 years, and delivers raw seafood directly from all over Hokkaido and beyond. Scallops and whelks are purchased with the shells on as much as possible, and are served freshly shucked in the restaurant.
Popular menu items include nigiri sushi made with seasonal ingredients, the specialty "Kobore Ikura" (overflowing salmon roe), "Tsubasa no Saba" (Winged mackerel), a brand of mackerel from Nagoyakatei that is so fatty that it floats to the surface, and "Kaizukuri" (shellfish platter) where you can taste three kinds of fish: live abalone, live surf clam, and live scallop. You can choose whether or not to have the overflowing salmon roe served live, and if you choose to have the overflowing salmon roe served live, the waiter will pile the Kushiro salmon roe over and over again right in front of you, accompanied by spirited calls from the waiter and the sound of a drum, so much so that you can no longer see the gunkanmaki.
