Inspired by “brasato” (*4), a popular Italian stew, this hotpot incorporates “Muscat Bailey A,” a representative Yamanashi grape variety and a native Japanese species. The ingredients include beef, which pairs well with the light tannins of “Muscat Bailey A,” and winter vegetables such as turnips and Brussels sprouts, enhancing the texture and sweetness of the dish. Enjoy the balance of the vegetables’ natural umami and the rich, smooth, fruity soup featuring “Muscat Bailey A.”

The food truck on Piment Street will also offer customizable mulled wine with a selection of 10 spices and fruits. Four base wines are available, made with “Koshu” and “Muscat Bailey A” grapes. Each wine is paired with spices and fruits that complement its flavor and aroma. For example, “Muscat Bailey A,” characterized by light tannins and a strawberry candy-like aroma, is balanced with the sweetness of strawberries and the spiciness of “suritane,” a local Yamanashi condiment. The fruity and refreshing “Koshu” grape pairs well with yuzu and cloves for a refreshing twist. Enjoy a total of 100 variations of hot wine, from classic to unexpected combinations, perfect for the cold winter.
