On a private terrace immersed in the nature of Mt. Yatsugatake, enjoy an aperitif(*2) of Tsukika Chardonnay 2017 from Domaine Mie Ikeno. Shadow queen potatoes, turnips, and other seasonal winter vegetables are served with hot fonduta (*3) for dipping. Grape vine branches from Domaine Mie Ikeno feed the fire, letting guests savor the mariage of wine and cuisine while sensing the terroir of the wine’s land of birth.

After the aperitif, guests will move to a private room adjacent to the terrace for a special dinner featuring every 2017 vintage Chardonnay, Pinot Noir, Merlot, and Prive from Domaine Mie Ikeno. The 2017 vintage is characterized by the richness of minerals and acids, with gentle aging. These wines have reached the time of drinking, with harmonious bouquets. The hotel’s affiliation with Domaine Mie Ikeno allows it to offer every variety of the wine. The Prive 2017 wine is paired with pici pasta in a wild boar ragout. Prive 2017 is characterized by aromas of black berries, herbs, and spices, with smooth and soft acidity and tannins. Winter-fatted game, the fruitiness of Merlot, and the wild taste unique to the herb yamato nadeshiko draw out the flavor of ingredients. As Prive is available solely at our hotel, this is a mariage that can be experienced only here.

After dinner, enjoy the post-meal afterglow(*4) with a digestif in the Wine Suite Maisonette guest room provided as accommodation. With Bordeaux color as its interior tones, the Wine Suite Maisonette is a wine lover’s suite room with a wine cellar and wine glasses unique to the room. The digestif features two types of bonbon chocolat made with Chardonnay and Privet from Domaine Mie Ikeno along with grappa, a spirit produced by fermenting and distilling the skins and seeds of grapes during wine production. Bonbon chocolat is characterized by its balance of fruitiness and acidity. In a suite room that symbolizes the wine resort, spend a luxurious time immersed in the post-meal afterglow.

Breakfast on the following day will be prepared in the in-room dining space to let guests relax. Breakfast is served with a hearty vegetable salad, bread, omelet, fruit, yogurt, and more, alongside condiments (*5). A half-bottle of Domaine Mie Ikeno wine, available in this room only, is served alongside cheese, ham, and nuts for enjoyment of wine from the morning. With vegetables and cheeses as the main dishes, it’s a perfect breakfast for a pleasant morning.
