Winter limited dinner course at HOSHINOYA Okinawa “Ryukyu Sicilian – Bellezza”

A new winter gastronomy focused on beauty using the culinary culture and ingredients unique to Okinawa 

HOSHINOYA Okinawa will offer a new, special course "Ryukyu Sicilian - Bellezza" from November 1, 2023. "Ryukyu Sicilian" is a dinner course that is served at the property, which uses ingredients that are familiar in Okinawa prepared using Sicilian culinary techniques. In the winter edition of Ryukyu Sicilian, we focused on bellezza, which means beauty in Italian. With the unique food culture that dates back to the time of the Ryukyu dynasty, ingredients that are grown in warm climates, and our concept of Ryukyu Sicilian, we will offer a nine-course meal to promote health and beauty. 

Ryukyu Sicilian
Sicilian cuisine is characterized by a food culture not found on the mainland of Italy. Influenced by a variety of countries for historical and geographical reasons, it still has a strong sense of the culture of each period, including ancient Greece and Rome. This is very similar to Okinawa, which has developed its own food culture while incorporating influences from other regions. They are also blessed with beautiful seas and a mild climate, and the frequent use of fresh seafood and citrus in their cooking is similar. We thought that a cooking method used in a place with such similarities would be a good match with the ingredients of Okinawa, bringing new flavor profiles to the table and it was named Ryukyu Sicilian.

The story behind the creation of Ryukyu Sicilian-Bellezza
Through trade with China during the Ryukyu dynasty, the idea that "the source of food and medicine is the same" was brought to Okinawa and was widely spread as a teaching named kusuimun ー a well-balanced diet is medicine. In Okinawa, where the winters are temperate, colorful vegetables grow, and the pork, which represents Okinawa's food culture, is rich in protein, B vitamins, and other nutrients that can be beneficial in beauty. By combining the teachings of kusuimun, vegetables and seafood, and the concept of Ryukyu Sicilian, a course leading to beauty was born. 

Dishes from Ryukyu Sicilian-Bellezza
Cold Mango and Tomato Cappellini
Many vegetables grow during this time of year when hot summers pass and mild weather prevails. Sweet tomatoes, rich in vitamins, are made into a transparent jelly and is then mixed with Capellini pasta. With the salty taste of prosciutto and the moderately sour taste of marinated mango, a refreshing dish is created. 

Tebichi & Insalata
Pork was introduced in the 15 century to host guests from China and pork is representative of Okinawan food culture, which makes use of limited ingredients without waste. Tebichi, a traditional dish in which pig's feet, which are rich in collagen, are simmered until tender, is prepared using Coppa di Maiale, a method in which pork is boiled until it is juicy. Baked on a hot griddle, this is an exquisite dish with both a crisp and creamy texture. The beautifully arranged Insalata is simply made with colorful vegetables and enjoyed with a salsa verde sauce using Tankan citrus, anchovies, and garlic.

Pork Rotolo
The main meat dish is rotolo, where thinly sliced pork is wrapped with seasonal vegetables. It uses moromi-fed pork, where moromi is the byproduct of awamori, Okinawa's distilled alcoholic drink. The black aspergillus in moromi is an Okinawan strain that has been around for more than 600 years, and the abundant citric acid is expected to restore fatigue. Different flavors and the power of fermentation can be enjoyed in this dish as the rotolo is accompanied by a condiment of fermentated products that are unique to Okinawa, such as sukugaras (young fish pickled in salt) and tofuyo (Okinawan fermented bean curd).
