Summer edition of Ultimate Wine Stay at RISONARE Yatsugatake

RISONARE Yatsugatake, a wine resort that is surrounded by an abundance of nature, will offer a weekday-exclusive overnight stay package for guests to savor rare wines between July 1 and August 31, 2022. This package will include wines like the Domaine Mie Ikeno Back Vintage Chardonnay and half-bottles of wine that are not sold to the general public. In addition, guests will be treated to an elegant aperitif on a brisk summer evening featuring pairings of rare wines that are not commercially available with cuisine featuring the best that nature has to offer. For dinner, a special full course meal with different vintages of Chardonnay will be served at OTTO SETTE, the main dining space of the resort. Spend the night in our Wine Suite Maisonette for a stay to enjoy wine to the fullest.

Background
RISONARE Yatsugatake is located near the prefectural borders of Yamanashi and Nagano, which are both areas known for wine production in Japan. Since 2006, our resort has partnered with Domaine Mie Ikeno to embark on its first endeavor as a wine resort. Taking advantage of its location in one of Japan’s top wine-producing regions, the resort offers activities, overnight stay packages, and other experiences for guests to experience the appeal of the wine. This plan was developed in our hotel, which is affiliated with Domaine Mie Ikeno, with the hope that you can enjoy rare back-vintage in a place where the grapes grew. Enjoy a glass of Domaine Mie Ikeno Chardonnay whilst feeling the refreshing summer of the highlands.

Characteristic 1) A Special Apéro on a Private Deck in the Woods
With exclusive access to a deck to enjoy nature and the cool summer breeze, guests can spend an apéro time with white wine. “Party Party,” a rare wine that is not available on the market, will be served as an aperitif, along with four seasonal dishes that are made of fresh, local ingredients. Party Party is characteristic for its sweet aroma with notes of vanilla and butterscotch, and its fine bubbles. It will be paired with four dishes that are perfect for a cool apéro during the summer, such as bagna freida with a cold sauce featuring cauliflower purée and the Venetian dish mantecato made with char, which is a type of fish that is in season during the summer. Savor wine that was made in this region with cuisine made using the best ingredients that nature has to offer.

Characteristic 2) A Special Dinner to Enjoy Food with a Vertical Tasting
At OTTO SETTE, guests will be served a full course dinner with a vertical tasting of back vintages from 2016 to 2018. Chardonnay will be served, which has various flavors depending on the climate and soil of the region where it is made. This vertical tasting will invite guests to enjoy the differences in flavor between each vintage based on its level of maturity and the condition of the grapes. The 2016 vintage, which stands out for its notes of tropical fruit and sweet aroma that is reminiscent of butterscotch, is paired with steamed char. The 2017 vintage, which has a distinctive crisp acidity, along with notes of compote of yellow fruits, herbs, and flowers, is paired with tonnarelli with sausage and fennel. Finally, the 2018 vintage, which is characteristic of its refreshing acidic taste and notes of ripe yellow fruits and the smokey aroma of a barrel, is paired with sauteed foie gras. Enjoy a special evening with wines by Domaine Mie Ikeno.

Characteristic 3) Stay in the Wine Suite Maisonette that defines our wine resort
Guests will be staying at the Wine Suite Maisonette, a maisonette-style suite. The first floor features a bedroom with distinctive wallpaper portraying the magnificent Yatsugatake Mountains, while the second floor features a living room with a floor sofa for relaxing and sweeping views of Piment Street, the main street of the resort, through the large windows. The wine cellar of the guestroom will be stocked with Domaine Mie Ikeno’s Chardonnay, Pinot Noir, and Merlot of the same vintage. Guests can fully enjoy the differences in flavor between these varieties that were cultivated under the same natural conditions with the same climate and soil.

Characteristic 4) Relaxing breakfast in the room
Breakfast will be served in the room on the following morning for a relaxed morning. Bread that has been chosen specifically for this package, salad with a variety of vegetables, fruit, an omelet, yogurt, etc. will be served with several condiments in a wooden box. Vegetables and fruits are the main ingredients of the meal, perfect for a refreshing summer morning.

Winery Introduction: Domaine Mie Ikeno
Domaine Mie Ikeno is a vineyard on vast land at an elevation of 750m where Chardonnay, Merlot, and Pinot Noir grapes are cultivated. All steps from growing the grapes to fermenting the wine are handled in this winery based on the desire of the brewer, Mie Ikeno, to produce high-quality wine using only grapes that she has grown herself. With an aim to produce wine that feels as if it has bottled up the nature of Yatsugatake, the grapes are cultivated with minimal chemicals and no herbicides.
