RISONARE Yatsugatake will be hosting an ultimate wine stay from 12 December 2022 to 31 March 2023 for guests to enjoy a stay to savor the rare wines of Yatsugatake paired with a dinner course that uses locally sourced ingredients. A weekday special stay to enjoy the local produce of Yatsugatake at the terrace seats next to a fireplace at Al Fresco. With our partner winery, Domaine Mie Ikeno, who focuses on producing high-quality wine using only grapes that she has grown herself, wine exhibiting the terroir of Yatsugatake can be enjoyed. An ultimate wine stay for wine connoisseurs to indulge in the flavors of wine from aperitif through dessert and back in the rooms.

Background
In 2006, RISONARE Yatsugatake partnered with Domaine Mie Ikeno and embarked on its first step to becoming a wine resort. Taking advantage of its location in one of Japan's best wine-growing regions, the resort now offers activities, staycation plans, and other opportunities to experience the charms of wine. This new plan was designed with the hopes that guests will enjoy Domaine Mie Ikeno's rare back vintages at the very location where the grapes were grown.

Features of Ultimate Wine Stay – Winter Edition
Aperitifs served on a deck nestled in the woods
Enjoy an aperitif around the fireplace of the Al Fresco deck, a place where you can experience nature to the fullest. Rare wine, named “Mie Ikeno Tsukika Chardonnay 2017” is paired with three dishes that utilize all of nature's bounty. This exquisite white wine features a condensed fruity taste and sourness with a crisp mineral finish. The menu features three dishes, including a roasted vegetable fonduta served with warm cheese and Baccala mantecato, a traditional Italian dish. Roasted vegetable fonduta is a warm dish that is served on a hot stone, ideal for winter. Guests will taste the terroir of Yatsugatake with wine made from grapes grown on this land and cuisine that makes the most of its natural bounty.

Al Fresco dining with a vertical tasting of Merlot
The dinner course will be served at Al Fresco and will include a vertical tasting of Domaine Mie Ikeno's back vintages of Merlot, namely 2016, 2017, and 2018. Each vintage offers different flavors depending on the conditions in which the grapes are grown and their degree of ripeness. 2016 has notes of dark fruits such as blueberries and cassis, followed by spices and earthy tones that give it a sense of maturity. 2017 is distinctive for its clove, cocoa, and Guinea pepper notes and deep acidity. Finally, 2018 is striking for its intense fruity flavor and balance on the palate. The dinner's main dish will also include roasted venison served with braised clams, all in a red wine sauce. Combining the main dish with the 2016 Merlot brings together the wine's fruity and spicy notes, and the braised abalone combined with the wine’s maturity makes a delightful pairing. This dinner is an opportunity to enjoy Domaine Mie Ikeno's wines while enjoying a luxurious moment in a private space.

Indulge in a luxurious digestif
After dinner, guests will be invited to enjoy a luxurious digestif in the Al Fresco living room. The digestif includes Grappa, which is fermented and distilled from the skins and seeds of grapes used to make wine, and chocolate bonbons made with Domaine Mie Ikeno's wines. The chocolate bonbons feature a well-balanced fruity and acidic flavor. Enjoy a lavish post-dinner experience with Grappa and our original chocolate bonbons.

Guest rooms featuring three complimentary half-bottles prepared by Domaine Mie Ikeno, exclusive to RISONARE Yatsugatake
Guest rooms are located near the Al Fresco dining area. Domaine Mie Ikeno's Chardonnay, Pinot Noir, and Merlot will be available in half-bottle size in the guest rooms, an exclusive offering only available at RISONARE Yatsugatake. One half-bottle is equivalent to about three glasses of wine, so guests will be able to fully enjoy the wines during their trip. Enjoy Domaine Mie Ikeno wines in the comfort of your own room.

A leisurely breakfast
On the morning of the stay, in-room dining is offered at breakfast. In addition to a salad made with a variety of vegetables, breakfast includes bread, fruit, omelets, yogurt, and other items presented in a wooden tray with several condiments. This breakfast is the perfect morning meal, with vegetables and fruits as the main ingredients. We recommend having it with a glass of one of the wines prepared in the guest rooms.

Winery Introduction: Domaine Mie Ikeno
Domaine Mie Ikeno is a vineyard on vast land at an elevation of 750m where Chardonnay, Merlot, and Pinot Noir grapes are cultivated. All steps from growing the grapes to fermenting the wine are handled in this winery based on the desire of the brewer, Mie Ikeno, to produce high-quality wine using only grapes that she has grown herself. With an aim to produce wine that feels as if it has bottled up the nature of Yatsugatake, the grapes are cultivated with minimal chemicals and no herbicides.
