A classic Hakone dish—broth-boiled beef and vegetables—is served at dinner. Beef became more prominent in Hakone food culture in the 19th century to cater to the Westerners who flocked to the area’s hot springs.

“Experience Artisanal Cooking”
The Hakone area is surrounded by steep mountains, with various types of trees growing there. It is here where the technique of combining many types of wood to create beautiful patterns was developed. This is referred to as Hakone yosegi-zaiku, and is a form of marquetry local to Hakone. These lovely handicrafts have been beloved by travelers to the region since time immemorial. Today, young artisans upholding these traditions have taken to creating yosegi-zaiku items in modern designs that are applicable to the present day.

KAI serves breakfast made with ingredients that let you taste the flavor of the region and the local cooking techniques. At KAI Hakone, we prepare Japanese set meals containing local Kanagawa ingredients like ”kamaboko” steamed seasoned fish paste, and rice cake.
