Hokkaido produces about 90% of Japan’s kombu, and nearly 30% comes from the Hakodate area.

Hakodate ma-kombu is especially known for its clear, refined broth. This buffet features three types of kombu broth—ma-kombu, Rishiri kombu, and Rausu kombu—each paired with simple seasonings such as salt, plum, or ginger to highlight their unique character.

The buffet offers 10 original dishes that incorporate kombu’s natural umami. Enjoy kombu-cured mozzarella caprese, seasonal fish prepared with kombu broth, red bean monaka infused with kombu flavor, and tiramisu with caramel kombu sauce.

Live Kombu Shaving & Cultural Experience

During the event, a Hakodate-based kombu specialty shop presents live kombu shaving using traditional knives.

The thickness and angle are carefully adjusted depending on temperature and humidity, creating delicate sheets of kombu.

Staff certified in kombu knowledge will also introduce different varieties and flavor profiles.

Freshly shaved kombu enhances both aroma and depth when added to dishes.
