Bali Island, where HOSHINOYA Bali is located, is renowned for its bold ancient culture and traditions, which are preserved to this day through the ancient wisdom of Tri Hita Karana, a way of life that means "three causes of well-being." In daily life, the Balinese maintain a balance of nature appreciation, human connections, and gratitude to the divine with many rituals and traditions. Rooted in this local tradition, HOSHINOYA Bali takes guests on a cultural journey through its culinary experience. Through the Bali Harmony Set Course Dinner, HOSHINOYA Bali not only showcases its culinary prowess but also deepens guests' connections to Balinese culture. Serving Balinese tradition on the plates, each of the eight courses offers interpretations of this philosophy, featuring authentic flavors inspired by Bali’s culinary heritage and Balinese tradition. From the 'Ceremony' Amuse Bouche to the 'Puja' vegetable dish, the menu presents a fusion of Balinese food culture, heirloom ingredients, and seasonal produce, providing a dining experience like no other. By immersing in this culinary journey, guests not only savor exquisite flavors but also deepen their connection to Balinese culture, enhancing their overall stay at HOSHINOYA Bali with a bespoke touch.
Characteristic 1: Harmony with the DivineMaintaining connections with the Divine and ancestors is the most important thing in Balinese life. Locals maintain a harmonious relationship with the spiritual realm, often through religious practices and rituals, which makes Bali rich with cultural beauty. The chef at HOSHINOYA Bali curates the menus to bring prominent traditions to the plate.
Starting with Amuse Bouche, symbolizing the important ceremonies of Galungan and Kuningan, the biggest ceremonies celebrated twice a year to mark the victory against evil and to welcome the gods and all ancestors visiting the earth. The menu consists of 5 small bites that are mostly available during Balinese ceremonies, such as Lawar Tortellini, Skewered Lamb, Salmon Tartar, Betutu Cannelloni, and Crispy Lak-Lak. The next dish to be served is the Soup, representing the purification ritual (Melukat) to release bad spirits inside humans, preparing them to start a new life again. Consisting of Tomato & Watermelon Gazpacho, with scallop confit and prawn, guests will taste the freshness of the soup as fresh as the Balinese start a new beginning after the purification ritual.
Another menu presented in Bali Harmony Set Course Dinner is Gado-Gado, which represents Canang Sari (Flowers for offering to the Divine). Presented beautifully, Gado-Gado is made from locally mixed vegetables, telling the story of how local people appreciate the connection with the divine by presenting flower offerings three times a day. Besides daily rituals, locals also maintain the monthly ritual called Tilem (New Moon). During Tilem, Balinese Hindus observe various rituals and ceremonies, including prayers, offerings, and temple ceremonies. It's considered an important time for spiritual activities and purification rituals. In this set course, Tilem is presented in the dessert, featuring local Balinese Chocolate with a variety of tastes, textures, & looks to cleanse the palate.
Characteristic 2 : Harmony with Nature
The second principle of the Balinese philosophy is Harmony with Nature. It involves living in harmony with the natural environment and respecting the balance of nature. This encompasses sustainable practices, environmental conservation, and a deep respect for the land, sea, and all living beings. In this Bali Harmony Set Course, the chef visualizes these community practices into two dishes.
The first dish is Roasted Fish, with the base ingredient of Seared Seabass, depicting Bali’s ocean catch of the day harvested in the morning against the backdrop of the beautiful mountains. It represents the nature of Bali, where the landscape features volcanic mountains that make the island fertile and green. The menu also reflects the sea surrounding the island and its contribution to Balinese life.
The second menu item is Beef Steak, which represents Mother Earth providing continuous life to all creatures in the island. The meat is prepared using a traditional hearth-baked cooking technique, wrapped in banana leaf and coarse salt. The dish is presented of Roasted Beef Andaliman with red onions, pumpkin, potato, and paprika, served with brown stock and green herbal sauce.
Characteristic 3: Harmony with People
It relates to maintaining harmony within human relationships, including family, community, and society as a whole. It emphasizes social cohesion, mutual respect, and collective well-being. HOSHINOYA Bali learns the beauty of this third philosophy in how the community maintains the ricefield irrigation called ‘Subak’, the ancient technique of maintaining harmony with people in terms of agriculture, as well as how the locals work together to maintain continuity and fairness in the community.
The Risotto menu is presented to describe how people grow rice and collaborate with duck farms. It’s a traditional technique used by the Balinese to let the ducks to inhabits the ricefields after harvest time to make the soil fertile for the next planting seasons and clean it up from the ricefield pests. The combination of ricefields and ducks, as the iconic scene of Ubud, is presented with the ingredients of Duck Risotto with black spice, grated coconut, and served with Red, Black, and White steamed rice.
Additionally, the aspect of art in human beings is also presented by the chef in Avant Dessert Refreshment. This dessert symbolizes how the Balinese express their artistic side after spending the whole day working in rice fields and oceans. The arts, such as traditional music, dance, paintings, and carvings, are mostly found in Ubud, which is the heart of the cultural area in Bali. Avant Dessert Refreshment is made of a local fruit sorbet mixed with a traditional herbal drink or Jamu, called Loloh Cem Cem, to give a sense of recovery for the body through the arts of Bali.
