Dinners are inspired by the cultural renaissance of the Asuka period (538–710), which was underpinned by a Chinese philosophy that integrated yin-yang and wuxing. A distinct harmony arises in each dish from the combination of ingredients, as well as the shapes and colors of the dinnerware.

Asuka Bubu-zuke Breakfast

A gentle, nourishing breakfast featuring hishio, an ancient fermented seasoning, alongside sea bream and salmon—historically prized as tribute fish. First, savor the natural flavor of each ingredient as is, then finish by pouring piping-hot dashi broth over top to enjoy as ochazuke.

Beef Shabu-Shabu Set Meal

A dish featuring beef and seasonal vegetables savorably cooked in a special dashi broth. Enjoy it paired with noodles kneaded with Yamato tachibana, Japan’s oldest citrus variety.
