The kaiseki dinners feature premium seasonal delicacies, such as rosy seabass and crabs that can only be caught at certain times of the year. Food is served on ceramicware crafted in the regional Kutani-yaki style.

"KIWAMI" Special Dinner: Winter

This is "Kiwami" Special Dinner.

In this luxurious kaiseki cuisine meal, all of the 1.5 portion of crab in each patron’s dish are live, fresh crab. The signature dishes are the Rope-Tied Steamed Crab and crab sukiyaki. The Rope-Tied Steamed Crab comes with brand-name crab with the identifying tags attached.

“A harmony of plates and cuisine”
A common saying describes plates as the “kimonos of cuisine.” Proper plating enhances the appearance of a meal and makes it more flavorful. At KAI Kaga, we refer to this as “a marriage of plates and cuisine”, and we asked young artisans of Kutani ware and Yamanaka lacquerware to create original plates tailored to each dish. In this way, we are contributing to the continuation and development of traditional crafts.

KAI serves breakfast made with ingredients that let you taste the flavor of the region and the local cooking techniques. Mornings begin with a set meal including a regional hot pot ‘Ishiru Nabe’ with fine local seafoods as the main dish. Enjoy the ‘Ishiru’ ingredient which is one of the major fish sauces in Japan produced from Okunoto, Ishikawa.
