Inspired by classic strawberry shortcake, this dish offers a surprising twist. The sweetness of the strawberry sauce is paired with refreshing shiso syrup ice and sun-dried salt cream, topped with castella cake. The aroma of shiso—grown in one of Japan’s leading production regions—and the savory notes of mineral-rich sun-dried salt provide a vibrant accent that enhances the sweetness. This “next-generation shortcake” features an exquisite balance of sweetness, freshness, and saltiness that’s sure to lift your spirits on a hot day.

Chilled Syrup Shaved Ice ~Ginger and Sweet Potato Chips~

We’ve boldly combined Kochi’s signature drink, “Hiyashi Ame,” with sweet potatoes. Kochi ranks first in Japan for ginger production. This dessert features ice made from ginger-infused Hiyashi Ame syrup, topped with a rich cream made from sweet potatoes and mascarpone, and finished with two types of sweet potato chips—crushed and sliced. The refreshing kick of ginger and the sweetness of the sweet potato pair surprisingly well. The crunchy texture of the sweet potato chips adds a fun element, making this a dish overflowing with “love for Kochi” that reimagines local flavors in a modern way.

Tosa Tea Shaved Ice ~Anmitsu-Style with Sansho Pepper Agar~

We’ve added the distinctive flavor of sansho pepper—a specialty of Kochi—to the traditional pairing of tea and anmitsu. We top shaved ice with black sugar syrup, Tosa tea condensed milk, shiratama dumplings, and red bean paste, then finish it off with a sprinkle of Tosa tea powder. The highlight is the aroma of sansho pepper agar that wafts up to your nose the moment you take a bite. The refreshing kick of sansho pepper blends with the sweetness of Tosa tea and red bean paste, creating a Japanese-style shaved ice dessert that offers a delightful interplay of textures and aromas.

We serve our drinks in original glassware crafted by “Tochi,” a small glass studio located in Nankoku City, Kochi Prefecture. Each piece is handmade, making it a one-of-a-kind item that radiates the warmth of artisanal craftsmanship. We offer six colors—red, yellow, orange, blue, green, and purple—which also serve as the design theme for our establishment. Not only will you enjoy the taste, but the bright, refreshing glassware will also help you feel the coolness of summer.
