Gastronomy Chronicle

Western cuisine has flourished in Japan through reinterpretation since it was introduced there in the 19th century. This culinary history is chronicled through an imaginative dining experience, where every dish is a moment in time from Japan's past—and even its future.

Meiji-style Breakfast

During the Meiji era, when dining habits became Westernized, fried dishes gained immense popularity. Inspired by this culinary history, we have paired rice with a selection of favorites, including Scotch eggs, Japan-originated fried prawns, and crab cream croquettes.
