A Blissful Moment to
Awaken Your Senses
An exciting dinner time presented by Buffet dining "PUKU PUKU" at RISONARE Shimonoseki.
In addition to a variety of pufferfish dishes such as "deep-fried pufferfish" and "chilled pasta with pufferfish skin," we offer a colorful selection of seafood dishes, including "four varieties of sushi" that evoke the lively atmosphere of Karato Market and "pufferfish Kaihozuke" (marinated seafood).
Wondering which dish to try first is all part of the special fun of a buffet. Furthermore, at the live kitchen, "grilled pufferfish and beef" is freshly cooked and served right before your eyes. The savory aroma and the dynamic cooking sensation will make your dinner time even more delightful.
Savor the bounties of the Kanmon Strait and fully enjoy a special gourmet experience unique to this resort.
A wide variety of pufferfish dishes
Enjoy a diverse variety of fugu (pufferfish) dishes prepared in various culinary styles—not only classic favorites such as "fugu hot pot" and "deep-fried fugu," but also creative specialties like "grilled fugu and beef" and "chilled fugu skin pasta."
Grilled Fugu and Beef
Firm, springy fugu is finished with the aromatic richness of butter and paired with beef. This dish offers a fresh new flavor experience for fugu, which is typically strongly associated with traditional Japanese cuisine.
Chilled Fugu Skin Pasta
Inspired by the region's abundant citrus harvest, this dish pairs sweet-tart amanatsu and mikan oranges with a flavorful tomato sauce. The sauce coats the delicate strands of thin capellini pasta, allowing guests to enjoy the pleasantly crunchy texture of fugu skin alongside a wonderfully refreshing acidity.
Bone-in Deep-Fried Fugu
A dish featuring bone-in fugu fried to fragrant perfection, offering a delightful contrast between a crisp exterior and a tender, succulent center. Enjoy it accompanied by a tartar sauce infused with the refreshing aroma of citrus.
Steamed Fugu Dumplings
Plump and juicy shumai dumplings packed with the concentrated umami of fugu. With just one bite, the refined flavor and gentle sweetness of fugu spread richly throughout the palate.
Buffet Counter
At the buffet counter lined with colorful dishes, an enticing variety of menu items is on display. A new station has also debuted, where guests can abundantly savor the bounty of the sea with selections such as "four varieties of sushi," "Kaihozuke" (marinated seafood medley), "grilled squid," and "crab soup." From this exciting lineup, please enjoy a special dinner unique to the resort in your own preferred style.
Four Varieties of Sushi
Echoing the vibrant energy of the sushi event held on weekends at Karato Market, a lineup of four varieties of sushi—hiramasa (yellowtail amberjack), salmon, red sea bream, and conger eel—is beautifully presented.
Kaihozuke with Fugu
Guests can create their own Kaiho-don (seafood rice bowl) by topping steamed rice with as much Kaihozuke as they like—a rich seafood medley of tuna, salmon, scallops, fugu, and salmon roe marinated in a sweet and savory soy sauce.
