This refreshing soup combines seasonal strawberries with a variety of flavorful vegetables, including red bell pepper, beets, early red onion, and celery. The rich ricotta cream enhances the elegant sweetness of the berries, making it a dish that truly announces the arrival of spring. Strawberry Capellini

A refreshing chilled pasta that harmonizes seasonal strawberries with the savory umami of salami and the light acidity of white balsamic vinegar. Topped with marinated strawberries, tomato jelly, and oregano, this dish is designed to let you fully indulge in the vibrant aroma and multifaceted flavor of strawberries.

Venison and Beetroot Risotto

The venison is first flash-fried to lock in its juices, then finished over a charcoal grill to achieve a fragrant, savory crust while remaining tender and moist inside. Inspired by the classic Italian combination of pistachio and orange, we have replaced the pistachio with green peas to highlight their fresh, verdant aroma—a true hallmark of spring.
