Ryukyu Court Cooking
Learn about the culture of the Ryukyu Dynasty through the making of court cuisine.
This program is limited to one pair per day to cook court cuisine with the chef. Learn to make seasonal dishes such as "flower squid" (花イカ), which is shaped with a knife, and "biragaramachi" (ビラガラマチ), which is colorfully decorated. The finished dishes will be served in traditional lacquer ware, allowing participants to appreciate the beauty of the workmanship and traditional techniques.
A chef from HOSHINOYA Okinawa will cook court dishes from the Ryukyu dynasty. This program will prepare two colorful dishes, Hanaika and Hiragaramachi, from seven dishes served in Ryukyu lacquerware.
They also try seasonal dishes. For example, from autumn to winter, they prepare traditional dishes in which colorful vegetables are served in dashi stock, and decorate the table with a lot of ingredients from the fields and gardens.
There are fields and gardens where Okinawan vegetables and flowers grow, and the kitchen studio has a garden. Students learn about Okinawan ingredients and harvest seasonal ingredients. They enjoy cooking with these herbs and vegetables.
